Cocktails with Kate: Cucumber Jalapeno Margarita

It’s been a while since I’ve recorded a new Cocktails with Kate, three months to be exact. The last few months have been kind of a blur and although I must say I’ve certainly been spending some of (most of) my time mixing drinks, I just didn’t think it was appropriate to film myself making cocktails at a time when our industry was suffering.

The struggle is far from over but I must say that things are looking up. The restaurant industry has shown us over the past few months that they are a kind, strong, and resilient group of people. I, having worked in hospitality for over 15 years, already knew that. But it’s nice to finally see our industry getting the well deserved, positive attention it so very much deserves.

With all of this said, I thought it was fitting to start up Cocktails with Kate again on a Cinco de Mayo that just happens to fall on Taco Tuesday during the coronavirus pandemic. Cheers to all of the Mexican restaurants absolutely crushing the game!

Ingredients

  • Silver tequila — honestly I haven’t measured one ounce of alcohol since this stay at home order began. I’d say if you really want a measurement, it’s 1 ounce for every child you have at home with you.
  • 2-4 slices of fresh cucumber
  • 1-2 slices of fresh jalapeno
  • 1/2 lime squeezed for juice
  • Dash of simple syrup
  • Sliced cucumber for garnish

Add cucumber and jalapeno slices to your mixer with a dash of simple syrup, muddle it until you can’t muddle anymore. Add your tequila, fresh lime juice, and fill the shaker with ice. Shake what your momma gave you! Strain over a rocks glass filled with ice and garnish with a cucumber slice. Sit back, relax, take a sip, and dream about the first time you’ll be able to sit at a bar again and have someone else make you a drink. Cheers to the hospitality industry, and happy Cinco de Mayo!

In case you missed it live, watch me make a cucumber jalapeno margarita from my kitchen while my husband records it and my kids go crazy.
